When I was working in NYC for 6 months I stayed at the YMCA where I shared a kitchen.
It was inexpensive. The YMCA that I stayed at (around 34th St. & Avenue of the Americas) doesn’t appear to be there anymore.
Looks like the YMCA doesn’t offer kitchens anymore.

You should probably look for corporate housing. Also try: NYCTemporaryApartments.com, Hotel-Alternatives.com
or Craigslist.org. They all offer something outside of a typical hotel.
