I Prefer 3-4 star hotel rather than cheap guesthouse.Narai hotel in silom area also nice near BTS saladang,Ibis hotel around victory monument ,in Kaosarn you will find many tourists and some hotels there are not cheap and far from BTS but near GrandPalace. Royal river near Krungton bride also nice with the view of Chao praya river. Salil Hotel in Sukhumvit area also nice.I like Sukhumvit area.
In Chiangmai,I prefer the empress hotel near night market,or the park, you can even try guesthouse here different from Bkk more nature like Ban Gaew guesthouse but not Laithai guesthouse .Or if you want very nature hotel try fern paradise .

How much do you want to spend per night? Do you really need a hostel if you can find an air conditioned hotel with hot water and private toilet in the 500 – 650 baht range? Otherwise why a hostel unless you like sharing toilets and showers with lots and lots of other strangers??
How much you can afford to to pay per night will dictate what places are recommended to you. Once you get out of Bangkok you can find hotels with air starting around 400 baht, especially during low season.

http://www.suk11.com/P.S. you can take the overnight sleeper train up to Chiang Mai and save paying another for another hotel in Bangkok. Get your train tickets ahead of time, especially during high season.

i usually stay in the chart guesthouse on khao san road, various rooms including ones with private bathrooms or shared depending on your budget. nice bar downstairs with good food and directly opposite internet place. very surprisingly quiet once upstairs!! decent security and a hinge on doors to allow you to use your own padlock as well as the door lock. my room was shared bathroom single with overhead fan and was 250baht
sorry never made it up to chang mai! enjoy
