Starting early finishing early 100 k a day but maybe less into a headwind driving rain and more if have a tail wind and making real good time.

that’s up to you. its a relaxed vacation remember? do what feels good to you then stop. your the one that’s going to do the pedaling so just go and have fun and enjoy

I like riding about 90 to 100 kilometers a day on a bicycle vacation. Allows me to be very relaxed after a good shower and a good dinner.
A bicycle holiday which includes 6 to 7 days of riding allows the “demons” be burned out out of me.
One of the best ways to spend a holiday.
