Cooking In Paradise: Culinary Vacations Around the World
5COOKING IN PARADISE is a rich, definitive guide to hands-on gourmet cooking vacations around the world.Ever dreamed of sauteeing in Sicily?Or having a master divulge the secrets of perfect patisserie in Paris? How about mincing in Morocco?COOKING IN PARADISE will show you how to get there and scores of other places with over 150 listings for cooking vacation programs around the world (and a handful right here in the United States too). The Naftalis give details about famous courses–like Patricia Wells’ “at home” in her eighteenth century Provencal farmhouse–but have also unearthed truly unusual fare, from a Kosher cooking course in Tuscany to an Australian country house gourmet retreat to a Mexican cuisine class held at a working hillside farm in Oaxaca.COOKING IN PARADISE provides all the information you need to book a cooking vacation today, but with its evocation of far-flung locales and over 50 unusual recipes from the schools included, it’s perfect for the stay-at-home chef as well. What better way to learn about a culture than to spend a few days huddled over a stove with a local chef cooking the region’s specialties? Cooking vacations–which become more popular with each travel season–are the perfect way to not just visit a country, but to really experience it, and even bring part of it home. If you’ve ever dreamed of sautéing in Sicily, mincing in Morocco, or stir-frying in China, Cooking in Paradise, Joel and Lee Naftali’s practical guide to cooking vacations around the world, will show you how to get there.
The book covers a wide range of cooking programs–from budget to extravagant, from half-day classes to three-week programs–in Europe, Asia, the United States and Canada, Mexico, Brazil, Turkey, and Morocco. The authors provide extensive information about each program, including its history, information about the region and its cuisine, the instructors, and a play-by-play of how you can expect to spend the time. You can choose whether you want the glamour of cooking with a famous chef (from Jacques Pepin to Marcella Hazan) or the informal fun of cooking like a native (many programs are taught by enthusiastic and knowledgeable home cooks). You might spend five days cooking with Patricia Wells in her Provencal home kitchen, which boasts a La Cornue range, rotisserie, and wood-fired bread oven. There you’ll prepare traditional Provencal dishes like Saumon Entier Roti en Papillotte, Soupe au Pistou, and Tarte Tatin. Or you might prefer to spend a week cooking in the kitchens of Tutti a Tavola, a friendly Tuscan cooking school run by four women who open their homes to groups of students so they can experience four distinctly different Tuscan kitchens.
As authors Joel and Lee Naftali write, “If the heart of a home is the kitchen, then the soul of a region is the cuisine.” –Robin Donovan

Steamed rice is a constant in the meals, and is roasted by a series of (usually in a wok) accompanied food-about one per guest. Eating together is a collective activity, and all meals are shared around the table according to custom. It is usually a balance between sour, salty, sweet and spicy flavor in a dish or a meal, and it is believed to be the harmony between body forces Yin and Yang to restore. Yin represents cold, or calming energy, E. g. coconut milk and yang represents the hot energy, pulse rate, eg increased Chili Peppers. This theory has been passed down from generation to generation, and although many swear by them, we suggest you find out yourself. Jasmine RiceThe prized and aromatic jasmine rice is almost exclusively native to Thailand, making it one of the less accessible Basics of Thai cuisine, do not panic just yet, jasmine rice lovers: more food stores and specialty stores are stocking jasmine rice in its packaged grain section and Asian food / marketplaces are even more likely to wear it. Another popular Thai rice is short grain sticky rice, which is easier to find in similar markets, and can of sushi rice, to be replaced if available. Tip: dry jasmine rice in a cool area away from moisture and fresh air, for cooked rice can be stored for up to seven days in the refrigerator, or stored in the freezer for six months. LemongrassAn essential part of Thai cuisine, Lemongrass is an aromatic (some say Minty) with a herbal lemony taste. It grows in long, fibrous stalks, of which only the juicy white-yellow light bulbs are used, and it is customary to help with a knife before cutting and cooking, its flavor and taste to bring in a bowl bruise. Lemon Grass can be chopped finely and added to curries and pastes, but it is often used as cinnamon or bay leaves, which are usually removed before serving. Lemon Grass has been used since antiquity to relieve fever, abdominal pain and cold symptoms. It is slowly becoming a more common sight in health food stores and can almost always be found in Asian food. If you are not lucky, one will sometimes be used in your area, a mixture of lemon zest (peel) have a small amount of ginger are a common substitute for lemon grass and lemon leaves. If fresh lemongrass is not available, it is dried and powdered varieties. Two tablespoons of seasoning is equal to about one fresh stalk, and use an extra 2-3 pieces when cooking with dried dried lemon grass (for the seasoning, keep in mind that lemon grass is already). If you want the freshest possible lemon grass, you can grow it yourself, but keep it indoors during the cold months, if you live in a cooler climate. Seeds can online or at specialty shops to buy seed or you can easily germinate a lamp from another stem in a pot of water until it roots and then transferred to its own pot. Hint: Basil is another garden-friendly part of Thai cuisine, which grows in many climates. Coconut Milka ubiquitous staple in Thai food, coconut milk is the basis for many of curries, sauces, drinks and sweet foods and is often used to compensate for hot or spicy elements. It can in most supermarkets found or made at home! To prepare coconut milk, the grated meat of a ripe coconut with warm water and then squeeze the juice, but if you can find fresh coconut, you’re better off with the cans. A layer of fat at the top is normal (as with real milk), and this fat lowers the bad cholesterol (LDL) while promoting good cholesterol. Coconut milk boosts immunity and provides valuable fatty acids by binding to the top of the list of common Thai ingredients. Palm Sugar Palm sugar is from the palm of the SAP and Asian or Indian food shops can be found made. As there are shops, online ordering is also quite acceptable. Apart from sweets and desserts, palm sugar can also be used in savory dishes, like fish to play against their salt content. The sugar is a golden brown paste, and can be bright or dark and sticky. When you can not get your hands on each, you can substitute with brown sugar. Fish SaucePerhaps the most common taste in Thai food is fish sauce, soy sauce and sometimes the Southeast Asia. The best fish sauces are often thin and almost clear, with a salty taste derived from fermented fish (anchovies are the most common). It has a very pungent aroma and is to be an acquired taste, but it is practical as a salt substitute in many parts of the world used. Sugar is sometimes added to highlight its salinity. Fish sauce can be found almost always in an Asian market / grocery store in your area and is always a regular in the corridors of the many specialty food store. ChiliesGenerally speaking, the smaller the pepper the hotter it is, prik kee noo, and the smallest and most popular of the Thai chili is no exception. Recent studies show that eating hot peppers like this may help to fight fat all by itself! Chiles can be served in countless forms, from dried pieces (which are hotter than fresh) to ground beef in a sauce. The PRI-kee noo is the second hottest pepper in the Scoville scale, an index of pepperoni evaluated, and the seeds are the hottest part. Many cookbooks suggest she is preparing with gloves to avoid skin irritation and do not touch your eyes before washing your hands. If you can not, Thai peppers, whole dried Mexican chiles soften try and soak in a hot water. Tip: Do you drink to relieve any water to heat chili rice, beer or milk drinks do a better job.
